Family Tree Meats is owned and operated by Tom and Paulette Kessinger. It is located in the Flint Hills of SE Kansas on Tom's family farm. We are in cattle country so we hope to be of service to our friends and neighbors near and far. Our children and grandchildren have all been involved in getting this business started and keeping it running.
We really need your help getting cutting instructions. Your animals come in on Wed/Th.
We MUST have all hog instructions on the Tuesday before drop off.
Beef Customers we MUST have your instructions by end of day the Tuesday after slaughter.
There is NO TIME for procrastination! We may have 75-100 cut sheets per week to prepare. That takes time.
Your rancher is responsible for telling you this. So please don't blame us if you get Standard For Two.
We are now slaughtering on Wednesday evening and on Thursday. Covid has caused an increase in the number of animals we are slaughtering and spliting up the slaughter helps with pen space and work load for the men slaughtering. New delivery hours on Wed. will be 3-5 pm. Thursday morning will remain 7:30-8:30 am. You will be asked what day you will deliver. Thanks for all the help this past year.
We slaughter and process a variety of animals including beef, buffalo, hogs, sheep and goats. We also process wild game including deer, elk, antelope, etc. (we have some locals that love their hunting trips!).
We also have retail area. We carry a full line of retail beef, pork, chicken, cheeses, Amish goods that include jams, fruits, pie fillings, relishes, soups, snacks, and lots more.
We do make some specialties that have been popular with our customers: Cheesy Potato Sausage, Saucy Bacon Patties, Bratts, Summer Sausage (beef/pork) with Cheese, and several types of Snack Sticks.
We don't do "bundles". We do "discounts"! We let you order what you want and if you purchase at least 25# of ground beef, you will recieve a 5% discount on that and whatever beef or pork you purchase. Purchase 50# of ground beef and you will get a 10% discount. This is for beef and pork only.
Mon, Tues, Wed, and Friday 8am to 5 pm (Please note that we are closed noon to 1pm. We work hard and need the break.) Closed Saturday-Sunday-Thursday.
Closed all day Thursday for slaughter. Customers delivering animals are welcome to shop our retail area.
Slaughter Delivery times: Wednesday 4-6 p.m. or Thursday 7:30-8:30 a.m.. If you insist on coming outside of these hours there will be a penalty fee.
We accept all major Credit and Debit cards, VISION Cards (SNAP), personal checks and cash.
Do you have a friend who is selling you some beef? Questions to ask.
When our kids were growing up we would occasionally purchase a half beef from a friend. We were fortunate to always get good beef. Knowing nothing about beef, we never thought to question what we were getting. Now we know that asking questions can be a good thing. We see a lot of differnt quality beef on our cutting tables. I've seen people get a beef cut up into steaks, roast, etc. that should have just been ground beef. Almost any animal will make good ground beef but not just any animal makes a good steak or roast. There is a big difference due to breed, age, method of feeding (or not feeding), health of the animal. We promise to never send you out with a piece of meat that will harm you. But we can't promise that we will send you out with a great steak! We can keep the cooler and facility clean. We can age your beef appropriately. But we just cut it up, we don't raise it.
Please, ask a few questions. Is it an old cow or a young heifer? Is it an old bull or a young bull never worked? Was it a roping steer used in the rodeo for the last five years or a 20 month old steer that has been fed out for 90 days? Maybe even talk to others who have bought beef from this friend before. If you are going to spend $1500 you might want to check references. We have some really great ranchers out there and we have bought beef from some of them. But not all beef are equal.
Having said that - more people need to buy from Kansas ranchers. They work hard, love what they do and add to our local economy. Most do a great job and you won't get the same quality and flavor at the local grocery. You will soon be spoiled and convinced that it is the only way to put beef or pork on your dinner table. And you really do get more for your money.
